How did it all begin for BNUTZ?
BNUTZ all started when I was at university. I was constantly in deliberating pain with a hugely swollen stomach. I had no energy, I was tired and did not feel 18 that's for sure! 
I was vegetarian at the time but with receiving the intitial diagnosis of IBS I decided to become vegan and cut out processed and refined foods. This helped manage the symptoms hugely and further down the line it lead to a final diagnosis of polycytic ovary syndrome. This lead to my intrigued path of the correlation of the gut and the mind. I learnt the importance of physical wellbeing and diet. 
With the change in diet to now being vegan it lead to religiously having to read the ingredients list on everything. there were many products which would label thierselves as being healthy although when looked into further it was found that they weren't! 


My change in diet to being vegan lead to some very concerned housemate, family and friends. Everyone was expressing that they were very worried that I wasn’t receiving enough protein. My go to protein was nut butter. I became a nut butter addicted, although now reading the ingredients list on the back of the products it made me aware that my go to peanut butter had sugar and palm oil in it. There wasn’t much awareness and footage at the time on palm oil and the destruction it was causing, I was made aware of the issue at college when I was studying world development. I decided to make my own nut butters to avoid this problem. I would take the nut butters to university and use them as a dip for my fruit and veg. Surprisingly this generated a lot of interest, people in my class would ask if they could have a jar and the love of nut butter was shared. 
Shortly after graduating I went travelling, the time I spent travelling I packed lots of books on the law of attraction, listened to my intuition and my life changed quickly! 
My time in Thailand I travelled up north, and stayed with a hill tribe (lisu tribe) I was able to witness how they made nut butter, they used nuts all the time and would grind the nuts down using rocks (pestle and mortar effect). There way of life and practical medicine (shaman) was fascinating. They're explanation of illnesses/diseases was due to spirits such as water spirits, mountain spirits and fire spirits. The women in the tribe were notably very strong willed and powerful women. I found this very inspiring. 
After my travels to Thailand I went on to visit my grandparents in Jamaica, here I discovered how incredible coconut sugar and coconut oil is, their microbiological properties, immune boosting and antibacterial properties. 
When I returned from my travels I longed  to pursue a career in mental health. A few of my family members suffer from mental health problems, with this I have become a practical psychologist! It made me a pleaser with extreme drive. Suffering in my life, makes me not want anyone else to experience suffering. I have an obsession to help people, everyone has a purpose and this is mine. Were meant to grow so we have something to give. Make your life a masterpiece, we grow through each experience we have.

What advice would you offer to anyone wanting to start up their own food business?



If you have a burning desire and the passion then do it, however know your point of difference. Find a niece in the market and really shout about how you are so different. Be resilient, there are going to be lots of obstacles that you will encounter along the way, its just important to keep going and jump at every hurdle you come up against.

Some people avoid nuts due to the high fat content! ALTHOUGH, what they don’t realise is that nuts can help massively with lowering blood cholesterol levels and may also help reduce the risk of cardiovascular disease and metabolic syndrome💚.

These plaques can result from a diet high in saturated fat and reduce the flexibility and flow through blood vessels️. The result is an increase in blood pressure and possible heart attacks, strokes and vascular dementia if not treated😬

BNUTZ is all about transparency.



Here at BNUTZ, we believe in💯% transparency. I was suffering from a deliberating bloated stomach🤰🏼. I started to question was there a correlation between eating well and feeling goodYESI started to feel rejuvenated and revitalised. 

I developed further and became vegan/ital as I don’t like to eat processed foods either💛. However, occasionally I do allow a treat. Now that I was starting to read labels it occurred to me how many companies subtly added sugars and and other additives yet still claim they are health and nutritious📝. I identified this was the case with my go to nut butter and used the frustration and turned it into passion to create my own🙋🏽. So here we are stripping everything back and just using natural ingredients👌🏻

VEGAN FERRERO ROCHE’S 😍



These amazing ferrero Roche balls are super easy to make and loaded with nutrients. Such an indulgent treat and great to make for guests or just simply to get you through the week ahead! .
You will need 🛒
*
✔️🧡30g steamed/boiled/baked sweet potato (this is a very small amount! Great if you have any left overs)
✔️🌰🥄50g BNUTZ cacao & hazelnut butter
✔️🍫30g chocolate protein powder
✔️5g cocoa powder
✔️💛20g BNUTZ beefree honei.
✔️🥛40ml plant milk (you may need more or less depending on how runny your nut butter is)
✔️🌰6 hazelnuts
* Optional: cocoa nibs and crushed hazelnuts to roll the balls in.

Recipe 👩🏽‍🍳
.
1. In a blender combine all ingredients but the milk and hazelnuts. Blitz until everything is combined. It should be quite grainy and not too sticky
2.Transfer to a small bowl and add the milk, a little at a time
3.Stir until a dough consistency is formed. You should be able to roll it in your hands without it being too sticky
4.Divide the mixture into 6, and roll into balls, placing a hazelnut in the middle of each
5.Roll in cocoa nibs and hazelnuts, then refridgerate until you’re ready to enjoy (but they won’t last long!)

🧡LUNCH TIME🧡
Turmeric ravioli with BNUTZ vanilla and macadamia nut butter truffle filling. This truly indulgent lunch/dinner is an absolute sense sensation delight!! Sprinkled with a few roasted sunflower seeds and topped with grated vegan Parmesan🧀.

💫When we speak we are afraid our words will not be heard or welcomed. But when we are silent, we are still afraid. So it is better to speak🌠.

Recipe:

250g spelt flour.



250g all purpose white flour.



3/4 jar of BNUTZ vanilla and macadamia nut butter.



60g mushrooms blended in a good processor.



10ml luke warm water.



2 tbsp nutritional yeast.



160ml truffle oil.



Method👇🏻

.




1. Add the flour to a food processor, add in a little water until the dough sticks together.

2. Cover the dough and let it rest for 30mins 

3. For the filling; Place 1/2 of the BNUTZ jar in a large mixing bowl, add the truffle oil, mushrooms and nutrient Yeast. Set aside.


4. Using a pasta machine roll out the dough until it’s 2mm thick. I don’t have a machine so used a rolling pin 🥖.

5. Use a glass to press circular holes in the pasta sheet. 

6. Pop 1tsp of BNUTZ truffle filling inside each pasta shape and moisten the edges with a pastry brush and cover with another circle. 

7. Press the edges with a fork to ensure each piece is secure.

8. Cook in boiling water for 5mins! I love my pasta al dente ;) so left them for a little longer 

9. Spindle with sunflower seeds and cheese.

☕The coffee beans and vanilla neutralise the coconutty flavour🥥. 🙌🏻Top tips with caramel, don’t whisk it too much. Never stir it as it cooks just like sugar and will crystallise👌🏻. Have all the ingredients ready and work quickly🕰.

Ingredients;

🥥2x400ml full fat coconut milk.

☕️50ml freshly brewed espresso (I used Surrey hills)

🥄1tsp espresso nut butter.


🥃100g coconut sugar.

🥄1tsp vanilla and macadamia nut butter.

🥮3g agar flakes.

Method: 

1️.Place 6 metal Dariole mould’s on a Mat.

2️.put the sugar in a saucepan and add the water just enough to make all the sugar wet. Bring to the boil, without stirring and simmer until the sugar starts to catch. Once the sugar has reached this stage give the pan a swirl ad the continue to cook until it reaches a caramel colour. 
3.Quickly coat the base of each dariole mould with 2tbsp of caramel. 
4.Make the espresso creme. Place all ingredients into a saucepan, adding just enough espresso to achieve a cafe latte colour and flavour. 
5. Pour the espresso creme into moulds and refrigerate for 12-24hrs.
